Fathers Day

Fathers Day Muffins.


BIG and manly. And you can put MEAT in them. Grrrrr (insert manly grunting noises).

These are the easiest things to make, and are perfect for an accompaniment to a bacon and eggs breakfast. I'll put the basic recipe below.

BASIC INGREDIENTS:
75g butter
2 eggs
1 cup milk
2 1/2 cups self raising flour
1 red onion
1 cup grated cheese
1/2 teaspoon salt

Added ingredients (that I used this time, but you can whatever you like):
1/4 cup frozen peas
1/2 teaspoon smoked paprika
a good ole shake of Tuscan Seasoning
some leftover roast pumpkin
and a little bit of curry powder...not too much!

Finely slice the onion and fry in saucepan, add a wee pinch of sugar if you like for a bit of caramelisation.  Set aside and cool. Cream the butter, add eggs and milk together. Add cheese and cooked onion and any other added ingredients. Add flour last and mix until just combined and fill texan (MAN SIZE) muffin tins to the brim. Top with some grated cheese and bake for 20mins on 200 deg C.

These are so good spread with a little cream cheese.

Yay Father's Day! I think it was one of the best ever. Might get the boys to whisk up a batch of these to make "the dad" feel loved tomorrow as well. YUM!!!!!!!
